Basbousa Cake

Ingredients

  • Ghee 1 cup solid
  • Semolina 200 gm
  • Caster sugar 4 ounces
  • Desiccated coconut 2 ounces
  • Baking powder 2 tsp heaped
  • Cream (tetra pack) 8 ounce
  • Yogurt 500 gm or 3 tbsp
  • Milk 1/2 cup
  • For sugar syrup:
  • Sugar 1/2 kg
  • Water 1-1/4 cup
  • Lemon juice 1 tbsp
  • Rose water 3 tbsp
  • Directions

    1. Mix ghee, semolina, caster sugar, desiccated coconut, baking powder, cream, yogurt and milk in a well.
    2. Mix them altogether till smooth.
    3. Pour this mixture in well greased 12x9 inches pan.
    4. Level the top with spatula. Make cut marks in to cubes and place almond or cashew in middle of each cube.
    5. Bake on 180 degree C for 35 to 40 minutes.
    6. For Syrup: Cook water, sugar, lemon juice and rose water altogether till sugar is dissolved and thickens like a syrup.
    7. Pour this syrup over baked cubes right after taking them out of oven.
