Chicken Dum Biryani(using drumsticks)



Ingredients
For Marinating
Chicken(bone/boneless) - 1lb or 1/2kg
salt 
red chilli powder - 1tsp
turmeric - 1/4tsp
ginger garlic paste - 1tsp
Green chillies - 4
lemon juice - 1tsp
garam masala powder - 1/2tsp
Biryani masala powder 
(1spoon for 1 cup rice ratio)
or
bay leaf - 1
cloves - 3
cinnamon stick(2) - 1'
cardamom - 3
oil - 1tspn
Curd/yogurt (beaten) - 1cup
mint leaves(hand full)
corriander leaves(hand full)


For cooking Rice
Ingredients
Basmati rice - 2cups
salt - 2tspns
oil - 2tspns
shajeera - 1/4 tspn
cloves - 3
cinnamon stick - 1"
cardomom - 2
bay leaf - 1
corriander leaves
mint leaves



Procedure
1.Wash the chicken and drain the water completely.
2.If you use Drumsticks Put gashes(long deep cut) on the flesh of the drumstick.just run the knife wherever you find thick meat.For each drumstick you may find 2-3 places to cut.
3.mix salt,red chili powder , lemon juice and apply on the cuts of the meat.as  shown above.(If you are not using drumsticks you can skip this step).
4. To this chicken add all the ingredients under marinating.Marinate for overnight.
Procedure
1.Soak basmati rice in sufficient water(use more water) for 30min 
2.Take a big vessel add 7-8 cups of water add all the ingredients as listed above(except rice) and bring this to boil.
3.When water is boiling add the strained rice and cook for 5 min till it is half done.(the rice grain should break easily that is the right time to strain it).
4.Strain the boiled rice
Fried Onions
1.Take a Big Onion cut long thin slices and fry it in a oil till dark brown.(no need of deep frying).
Cooking in a Dum style in a  Convection oven
1.Take a oven proof dish /aluminium tray grease it with oil.
2.Layer marinated chicken with fried onions on a tray or dish.
3.Add the boiled rice on top of the chicken and spread evenly.
4.On top of rice add fried onions,corriander leaves,mint leaves, and sprinkle 2tbspns oil or cooking spray.
5.Now seal it with aluminium foil and cook in a  preheat oven for 400degree F for 30mins and reduce it 300 or 325(depends on your oven power) for 45 mins. switch off oven and let it standby for 10mins. you can take out and mix nicely.
Your Hyderabadi Chicken Dum Biryani is ready to serve
If you don't have saffron color or saffron threads you can add pinch of turmeric in rice when boiling.It gives some color
